And, yet, no matter how large a platter of cookies, they always get over. The truth is you can never have too many cookies, can you? For me, they bring back childhood memories of baking with my mom. My kids know that the cookie jar is always full of cookies this time of the year. Here you will find a collection of over 50 Christmas cookie recipes that are perfect for the holiday season – from the classic to something new. Try old fashion gingerbread cookies, gingerbread men, snickerdoodle, or gingersnaps. Of course, we also have a few different variations of classic Linzer cookies or sandwich cookies. And most of these Christmas cookies are also quick and easy to make. Or you can try something new this Christmas such as stained glass snowflakes, Christmas trees, or Christmas M&M cookies.
Gingerbread or cookies with molasses
Molasses is the taste of fall. In fact, one of the first cookies I make when fall sets in is gingerbread cookies. And because we love this recipe so much I make them in shapes such as Christmas trees, snowflakes, and of course jam sandwich cookies.
Spritz cookies
These are easy to make and very simple to decorate. As you can see below, I have frosted the Christmas wreath spritz cookies with sprinkles and Christmas trees with melted white chocolate chips. You could also sprinkle some crushed peppermint candy. The flower spritz cookies have raspberry jam centers but you can also use cream cheese frosting, Nutella, ganache, for those chocolate lovers.
Sugar cookies to decorate
We all need good sugar cookie recipes so we can cut them in any shape for any special occasion be it Christmas, Easter, Valentine’s day, etc. And while I have the best recipe for sugar cookies, I also have a no-chill cookie recipe that can be used instantly for those last-minute baking. And then, of course, my no-spread cookies make sure that those cookies do not get distorted no matter their shape.
Shortbread cookies
You can’t have a holiday cookie platter without shortbread cookies. Can you? Here are a few from the classic with just 5 ingredients to the whipped and easy.
Linzer / sandwich cookies
Kids love sandwich cookies no matter what the filling is. You can make the classic Austrian Linzer or the shortbread Linzer. My kids’ favorite is, of course, gingerbread so we sandwich those too.
Cookies with cranberries
Cranberries are always wonderful this time of the year. While you can use the fresh cranberries, the dried are also perfect when baked in cookies. And you can also add white or dark chocolate chips.
Cookies with nuts
While pecans are the flavor of the month, you can also try pistachios or hazelnuts, and macadamia. And blend some nuts with dates to make the most delicious date roll cookies.
Chocolate cookies
Who does not love chocolate any time of the year? Yes, Christmas only gets more wonderful with chocolate chip cookies.
