The whole family enjoyed it for dinner and my kids went nuts over the fact it was a soup filled with meatballs! (Never fear, little ones, I’ll be adding plenty of vegetables next time I make it!) The recipe is quite versatile, add as many vegetables as you like or leave them out entirely. I adapted it slightly, according to our tastes, but what makes Albondigas memorable is the tiny bit of mint added to the meatballs and the broth.
Having finally tasted it myself, I understand why this is the recipe that I receive so many requests for every fall. I wish I hadn’t waited so long to try it!
