They are so easy to make, one batch of batter makes a good amount, and my kids and husband just love them so why not keep on crepe’ing on? Right?  The best part about crepes is one batter, so many fillings! Kind of like pancakes. Well, exactly like pancakes, because a crepe is essentially just a very, very thin pancake that you stuff and top with all kinds of good fillings, like this cream cheese and sour cream crepe filling.  Plus, this sweet crepes filling makes perfect use of overripe bananas and other pantry staples. What to do with Excess Bananas 

We’ve all been there…staring at a big bunch of bananas wondering what to do with all of them. Or hoping you can get enough people in your house to eat the ones that are turning brown because you can’t (I hate eating brown bananas).  I seem to never know the right amount. Buy too few, and they are gone in two days, buy too many, and suddenly no one is feeling bananas. What’s a girl to do? Plenty! There are sooo many ways to use up old bananas! They contain fiber and are easy to digest. They are also good for heartburn prevention.  They are great snacks and provide lots of energy. That’s why they give them out after races and sporting events a lot.
