I always hated yogurt – until I tried greek yogurt. Seems like you either love it or you hate it but as soon as I took a bite it was obvious, I am a lover of greek yogurt. I eat it every. single. day. Blueberry greek yogurt makes a regular appearance in my kitchen. Cause um, blueberries? Delish. One of the great things about greek yogurt is that you can use it sooooo many ways, like pound cakes, oatmeal, cookies, brownies, pies, salad dressings, and of course popsicles. Nothing like a popsicle to cut through the heat of a summer day and cool you off. Or winter. I don’t judge. I’ve been known to eat ice cream whether it’s hot outside or freezing cold. I just like frozen treats, don’t care much which season I’m in. And throwing some greek yogurt in the mix makes me feel a little better about eating popsicles for breakfast. These blueberry popsicles are refreshing, tasty,  and take about five seconds of prep. Seriously. You just mix the stuff together and pour it into your popsicle molds. Of course you have to wait until they are frozen, which can be painful since you’re dying to gobble them up. But if you distract yourself with a pile of laundry or pop them in the freezer right before you go to bed, the wait will be slightly more bearable and before you know it, creamy frozen blueberry popsicle goodness. Mmmm.
