This Sandwich is made with cucumber, tomatoes, beetroots, potato, butter, green Chutney, and chaat masala. You can serve it as breakfast, a tea-time snack, or as a meal with soup and salads on the side. You can enjoy this Sandwich grilled or without grilling; it tastes great either way. If you have been to Bombay, you wouldn’t have missed seeing the stalls lined up on the streets making those veg sandwiches. Whenever I go to Mumbai to visit my brother, I eat this Bombay Sandwich every day. I do not get bored with them. They’re just that good! The combination of all the veggies, Chutney, chaat masala, and butter is delectable. Trust me! The Bombay sandwich is a deliciously wholesome, nutritious, and filling Sandwich. This Indian vegetarian Sandwich is a hassle-free, all-season dish loaded with fresh veggies and green sandwich chutney. The perfectly spicy green cilantro chutney is the star ingredient of this Sandwich. This green Chutney is one of the healthiest additions to this Sandwich, and you can use it as a dip with fried snacks, for chaats, and to make wraps. This Chutney aids in good digestion and enhances the taste of any dish. I usually make this green Chutney when I make the Bombay Veg Sandwich or Bombay Masala Toast Sandwich. When I am hungry, and there is nothing to eat, I take a slice of bread, apply this Chutney, and munch it as a snack. I make this Chutney in bulk and store it in the freezer. It stays fresh for up to 3 months. I will share some tips and tricks to keep this Chutney at the end. The Chutney calls for Daliya Dal (Roasted Split Gram). You can substitute it with peanuts too. To make it a bright green, Cilantro should be fresh. Sometimes I add a few spinach leaves to make them healthier, and spinach also gives nice green color.

Ingredients required

Chutney: Green sandwich chutney is the hero of this recipe. It adds a delicious spicy flavor to this Sandwich. This is not your regular green Chutney. It is different. For Bombay Sandwich Chutney, you will need Cilantro, green chilies, Roasted Daliya dal, lemon juice, salt, and Ice-cubes. Adjust the ingredients according to your preference. Add fewer green chilies if you prefer milder Chutney, and add more if you want more heat. For refreshing flavors, you can also add fresh mint leaves.

Bread: I used Regular Sandwich Bread to make these sandwiches but feel free to use any soft bread of your choice. Some great alternatives include brown bread, rye bread, multigrain bread, ragi bread, or whole wheat bread. You can also use sourdough bread.Vegetables: This Sandwich includes beetroots, tomatoes, cucumbers, potatoes, and onions. I add equal amounts of each veggie to this Sandwich, but you can add more or less or leave out any veggies you don’t like.Chaat Masala: Sprinkle chaat masala on every layer of vegetables for the best taste. You can easily find chaat masala online or at any Indian grocery store. You can use Snadwich masala instead of chaat masala.Butter: Salted Amul butter is used in this Bombay sandwich, but you can use whatever is available.

Step-by-step process

Make Sandwich chutney

Take all the chutney ingredients in a blender jar and grind it until smooth. Keep it aside.Tip 1. Ice cubes will help maintain the chutney’s green color. So please don’t skip it. Tip 2. Dont use water.Tip 3. You can store this chutney for up to 3 months in the freezer.

Sandwich prep

Boil Beetroot and potatoes in a pressure cooker or an instant pot. Once cooked and cooled, peel the skin and thinly slice them. Keep it aside.Thinly slice the cucumber and tomatoes. Keep them Aside.Please remove the butter from the fridge and let it come to room temperature. So it’s easier to apply to the bread slices.

Let’s Assemble the Bomaby Veg. sandwich.

Take two slices of bread. Apply some butter on both slices.Then apply Chutney on both slices (more or less depending on the spice level).Take one slice and start layering veggies over the Chutney.Start with cucumbers. Then sprinkle some chaat masala on top of the cucumber,Then layer with slices of tomatoes. Again sprinkle some chaat masala.Next comes slices of potatoes and a sprinkle of chaat masala.Then a layer of beetroot slices, a sprinkle of chaat masala, and a layer of onion rings.

Finally, place the second slice of bread, Chutney side down, over the veggies. Cut the Sandwich in half lengthwise or diagonally and enjoy with tomato ketchup.

How to store Bombay Sandwich Chutney?

  1. Take the Ice cube tray. Fill each cube with Chutney.2. Put it into the freezer.3. Keep it in the freezer for 4 – 5 hours or until it gets rock-solid cubes.4. Take it out and Put each chutney cube into Ziplock bags or an airtight container.5. Store it in a freezer. It stays suitable for up to 3 months (Even more than that). Whenever you want to use Chutney, take it out and defrost it.That’s it. Isn’t it straightforward!!!!!!

The Chutney can be prepped a day ahead and stored in the fridge. It is also multi-purpose and can be added to wraps, pakoras, or chaat.You can add or skip any veggies you do not like or prefer. But for the authentic Mumbai Sandwich, I suggest adding all the vegetables as listed in the recipe.Use thinly sliced veggies – boiled potatoes, tomatoes, cucumbers, and onions.The beetroot and potato are boiled, peeled, and sliced before being layered in the Sandwich.If the sides of the bread are stiff or you prefer not to have them, feel free to cut and discard them.You can use either chat masala or sandwich masala in this recipe.Use only ripe but firm tomatoes.Taste the cucumber before adding it to the Sandwich. Sometimes cucumber is bitter.Kids love cheese, so feel free to add a slice or grated cheese.
