It’s the perfect comfort food that you won’t want to miss! With simple ingredients and an easy-to-follow recipe, Homemade Butterscotch pudding is the ultimate comfort food you can make from scratch. Butterscotch is one of my favorite flavors. I enjoy it in various forms, including Barfi, ice cream, crinkle cake, and pudding.

What is Butterscotch?

Butterscotch is a simple mixture of brown sugar and butter. It can make a hard candy or sauce or lend its unique flavor to a dessert recipe, like today’s pudding recipe. A lot of people wonder what the difference is between caramel and butterscotch. The main difference between butterscotch and caramel is that caramel uses white sugar and heavy cream, while butterscotch is made primarily from brown sugar and butter.

I love homemade pudding. It’s way better than any store-bought one and easy to make. This recipe for butterscotch pudding uses simple pantry staples and a straightforward process that even a beginner cook can follow. It is one of those delightful little recipes requiring no effort or fancy ingredients. Mix the ingredients, simmer it for 10 minutes, and chill it for a few hours. That simple!! And the taste is out of the world! It is creamy and rich and tastes like caramel in all the best ways. The best part? It’s a no-bake recipe! You must make everything in a pot on the stovetop, and voila! You have a flavor-bomb dessert ready. The use of brown sugar in this recipe is what sets it apart. You can choose between dark or light brown sugar, depending on the depth of flavor you prefer. Adding a hint of salt elevates the taste and creates a sweet-salty balance that is truly amazing. The pudding is made with a combination of milk and cream, resulting in a smooth and rich texture that is incredibly satisfying. Most recipes call for cornstarch to thicken pudding, but I used Agar agar powder instead. You can make this dessert ahead of time for Holiday parties, birthday parties, or Gatherings. I highly recommend trying this homemade butterscotch pudding recipe; you won’t be disappointed. To give the rich and indulgent treat, I topped my Butterscotch pudding with whipped cream, caramel sauce, and Praline.

Ingredients required

Whole milk and heavy cream: We use a combination of whole milk and heavy cream as the base for our pudding. Although you can opt for whole milk alone, the pudding won’t be as smooth and creamy. I advise against using reduced-fat or fat-free milk in this recipe. Agar agar powder helps thicken the pudding. Brown sugar: Brown sugar is a crucial ingredient in this recipe, providing much flavor. The deep caramel notes we associate with butterscotch are created by brown sugar. Depending on your preference, you can use either dark or light brown sugar. It is readily available in grocery stores and online. Unsalted butter: The butter also adds silkiness and contributes to butterscotch flavor. Vanilla extract: Vanilla blends all the flavors very well. Salt: A small pinch of salt is all we need to balance the sweetness in this pudding.

Step-by-step process

In a mixing bowl, take Brown sugar, salt, agar powder, milk, vanilla extract, and heavy whipping cream. Stir and mix very well until well combined.

Take this mixture into a saucepan/pot. Switch on the flame to medium heat. Add unsalted butter, mix well, and stir occasionally. Let the mixture simmer for 5 minutes. Please remember not to boil the mixture. Take this out into a serving bowl. Let it cool down. Put this into the refrigerator for at least two hours. Butterscotch Pudding is ready. Serve them with some whipped cream, caramel sauce, and Praline.

Storage Instructions

When storing pudding, cover it with either plastic wrap or an airtight lid to prevent the formation of pudding skin on the surface. If using plastic wrap, press it directly onto the surface of the pudding to minimize air exposure. This step also helps moisten your pudding and prevents unpleasant odors from lingering in your refrigerator. It is recommended to store your homemade butterscotch pudding in the fridge, where it can typically last for up to 3 to 4 days.

When adding the butter, make sure to whisk very well to incorporate it. Don’t rush the chilling. You want the pudding to be set up completely before serving. Use good quality real butter and fresh brown sugar for that classic, rich butterscotch flavor. Use whole milk to achieve the creamiest texture in your pudding. To avoid lumps in your pudding, whisk the mixture continuously while cooking. For the best results, be patient and allow your butterscotch pudding to cool and set before eating. If you are using salted butter, don’t use salt. You may use Corn Starch/corn flour (Use 3 tbsp) instead of Agar agar powder.
