Chhole Palak Curry is delicious and extraordinarily creamy. Chhole Palak goes very well with Bhature, Roti, Rice, Naan or Paratha.
How to make Chhole Palak?
Heat 2 tablespoon oil in a pan. Add ginger, garlic, and chilies. Saute them for few seconds.
Add onion and tomatoes. Saute them for 5 minutes or until tomatoes are fully cooked.
Let this mixture cools down a little bit. Blend this mixture into a blender. Keep it aside.
Boil 3 cups of water. Add spinach. Let the spinach boil for 3 minutes. Let it cool down a bit and make a smooth puree. Keep it aside.
Heat 1 tablespoon oil in pan. Add cumin seeds and red chili. Let cumin seeds crackle. Add prepared tomato and onion based gravy. Mix well. Let it cook for 4 to 5 minutes over medium to low heat.
Add salt, chili powder, cumin and coriander powder, turmeric powder and chhole masala. Stir well. Cook it for 2 to 3 minutes.
Add spinach puree. Mix them very well. Cook it for another 2 to 3 minutes.
Add Boiled chhole / chickpeas. stir it very well. Add water if needed. Let them cook for 5 minutes.
Yummy Chhole palak is ready to serve. Serve Chhole Palak with Bhature and some onion slices. Enjoy!!!
