Have you ever had leftover chicken or beef roast that you can use in a sandwich? Once in a while, I like to use tortilla wraps. These make kids’ lunch boxes and snacks easy, too. When Aadi returns from basketball practice, he is usually quite hungry, which he will make on his own if I have the stuff ready in the fridge.
Tortilla/chapati wrap – I use store-bought or homemade whole wheat Tortillas or Indian Chapati. My kids can eat chapati at any time of the day with just about anything, and it’s whole wheat, so I usually don’t complain. Avocado – Now, I do not need to tell you how delicious and healthy this fruit is. All it needs is a little sprinkle of salt and pepper and a squeeze of lemon, and it’s delicious on its own. We often make avocado sandwiches for a quick snack. Yogurt dressing – I use this dressing on my salads and wraps. A blend of yogurt, mustard, and honey makes this a fantastic combination. Chicken – leftover or freshly made – I often make extra chicken so I can have leftovers for sandwiches. You can also use cold cuts instead of roast chicken leftovers.
Step-by-step instructions
Dressing – Combine all dressing ingredients in a bowl and set aside.
Tortilla – Warm the tortilla on a skillet for 30 seconds on each side.Pro tip – Warming the tortilla makes it softer, but only for 30 seconds. If you heat it too long, it tends to get crisp quickly and break when you roll it.
Place the tortilla on a plate or sandwich wrapper. Spread a generous amount of dressing. Followed by the shredded chicken, avocado, lettuce, cucumbers, and tomatoes. Season with salt and pepper. Add more dressing if you like a moist chicken wrap.
Fold the wrap as shown in the video – First, fold the bottom over the ingredients firmly. Then, fold the sides over to close the filling in. Continue to roll the wrap to the end. You can wrap it in a sandwich wrap, which keeps everything in place and makes it easier to eat. Enjoy!
