Soft or crispy, they are delicious both ways. I doubled this recipe and made a batch of sweet potato bites and a batch of yukon gold potato bites. We liked them both, but the sweet potato ones were a favorite for all of us. The leftovers also made an excellent breakfast the following morning with some scrambled eggs.
