Strawberry popsicle recipe
Puree – Wash, stalk, and hull the strawberries. Save about 1/2 cup of chopped strawberries for the mold and place the remaining in a blender or a food processor. Pro tip – The chopped strawberries for the mold are optional. I like a few bit of frozen strawberries in my popsicles. Combine – Next, pour in the water, honey, and Greek yogurt. Blend with the strawberry puree until smooth. Taste and adjust sweetness and creaminess. Add more honey or yogurt as necessary.Pro tip – Depending on how sweet the strawberries are, you may or may not need more honey. Molds – Distribute the chopped strawberries equally between the popsicle mold cavities. Then, fill each cavity with the strawberry popsicle mixture. Freeze – Place the stick on and put the molds in the freezer for 4 to 6 hours or until frozen. To unmold the popsicles easily, simply dip the molds in lukewarm water. Then, lift each one out of the mold. Enjoy!
Variations
Strawberry lemon popsicles – Add 2 to 4 tablespoons of lemon juice or lime juice and 1/2 tsp lemon zest. Combine well in a large or medium bowl before pouring into the mold. Mixed fruit and strawberry pops – blueberries, raspberries, blackberries, pineapple, and peaches are a wonderful combination with strawberries too Gelato– If you don’t have popsicle molds you can freeze the mixture in freezer bags and crust the mixture into a gelato before serving. Paper cup popsicles – if you don’t have popsicles, you can use small paper cups and popsicle sticks. Place them on a sturdy baking tray lined with parchment paper or paper towel to prevent them from moving before freezing. Alternatively, you can also use an ice cube tray! Vegan strawberry popsicles – if you can’t use yogurt you can use coconut milk to make these.
