It was the end of a very long day when I got home and needed to prepare something for our family.  I was exhausted and needed a quick solution.  That solution was this Ginger Scallion Noodles recipe that I threw together in about 15 minutes.  I had the noodles boiling and reached for the bundle of green onions in the fridge.  Before long I was grabbing this and that and this dish was born. Noodles tossed with fresh ginger, garlic and scallions in a flavorful Asian sauce, this dish is ready to serve in just 15 minutes and it’s delicious!  This dish can also be made well in advance.  Double score!

This dish is also naturally vegetarian and vegan.  If you’re on a gluten-free diet you can substitute GF noodles.
