I really love summertime activities. Not just the swimming and the camping and the trips to the lake. My favorite thing is probably the long summer niiiiii-iiiiiiights. (sang like Danny Zuko from Grease) Up on the top of my favorite things to do in summertime list is s’mores roasting, right alongside air show attending. Both of which, I’m ridiculously happy to say, happened yesterday. On the way to the gym yesterday morning we hear that the air show was that afternoon and made sudden last minute plans to attend. I think I’ve been to at least 7 or 8 air shows in my lifetime and I’ve always loved them. My favorite part of the show yesterday, as always, was watching the Thunderbirds fly in all sorts of crazy patterns. 500 miles an hour upside down is crazy peeps. Growing up my dad always talked about planes and fighter jets, so I’ve been bred to love all things airborne. At one point in time I even considered joining the Air Force. Now that, would have been an adventure. My life unfolded differently though and currently my feet are planted firmly on the ground while I go head to head with the fearsome grill on my back porch. I’m not exactly saving the country but I am saving my husband from an empty belly. That counts for something right? And speaking of grilling, we really should talk about this malibu chicken. Apparently there is a malibu chicken dish at Sizzler’s restaurant that is sooooo good. I say apparently because I’ve never tried it myself, but I’ve heard fantastic things about it. The key players in the dish sounded so good to me though, I was inspired to make something with some similar flavors. Enter – – – > this grilled malibu chicken. The Sizzler’s dish is breaded and baked, but it’s summertime and I’m cooking on the back deck every chance I get. So I skipped the breading and threw this tasty chicken on the grill instead. Oh my word, so good you guys, so good. These are flavors that were meant to be together. The juicy chicken with the salty ham and the melty swiss cheese, they all work together in a weird but totally amazing way. Top all of that with this ultra yummy but super simple sauce and the whole thing is WOAH-good. It’s heaven in your mouth I tell ya, the epitome of summertime eats. And this dish only takes about 20 minutes to fix so it’s ideal for busy nights! The prep is minimal, it’s pretty healthy, and the flavors just can’t be beat. So do yourself a big fat favor and try this grilled malibu chicken – you will be so glad you did!
