Using an ice cream maker can seem complicated due to the steps involved and the need to properly freeze the mixture. First, the ice cream base must be prepared and chilled. Then, the mixture is poured into the machine, which churns it slowly to incorporate air and prevent the formation of large ice crystals, resulting in a creamy texture. The machine’s freezing element simultaneously freezes the mixture as it churns. However, some machines require pre-freezing the bowl, adding an extra step and planning ahead. Despite the initial complexity, the machine ultimately simplifies the process by automating the churning and freezing, ensuring a smoother, creamier ice cream than can be achieved without one. Classic French ice cream, known as “crème glacée” or “French-style ice cream,” is a luxurious treat made with egg yolks, heavy cream, milk, sugar, and flavorings such as vanilla or fruit. The process begins by heating the milk and cream until steaming. Meanwhile, egg yolks and sugar are whisked together until pale and creamy. A small amount of the hot milk mixture is then gradually whisked into the egg mixture to temper it. The tempered egg mixture is then added back into the pot with the remaining milk and cream, and the mixture is cooked gently until it thickens slightly, creating a custard base. This custard is then chilled thoroughly before churning in an ice cream maker, resulting in a rich and creamy ice cream with a smooth texture and intense flavor. Here’s something simpler and easier without the lengthy process of tempering or using a ice cream maker! Indulge in the creamy goodness of homemade vanilla ice cream, crafted without the need for an ice cream machine. With just a few simple ingredients like heavy cream, sweetened condensed milk, vanilla extract, and a pinch of salt, you can create a decadent treat that rivals any store-bought variety. Whisk together the ingredients, pour into a freezer-safe container, and let the freezer work its magic. As it chills, the mixture transforms into a velvety smooth delight, bursting with the classic flavor of vanilla. Whether enjoyed on its own, paired with a warm slice of pie, or sandwiched between cookies for an irresistible ice cream sandwich, this homemade vanilla ice cream is sure to become a family favorite

Why make this ice cream?

It needs just 2 ingredients that you probably already have on hand. The rest are optional. Also, it takes just five minutes to whip and about 4 hours to freeze. And, it makes smooth and creamy ice cream with no ice crystals and no one will believe that it was not made using an ice cream maker. In addition, it has a long shelf-life. So, I make a few different flavors and keep them in the freezer. And unlike traditional ice cream, this one has no eggs, which means it’s eggless – one dessert for everyone.

Step-by-step: Vanilla Ice cream

In the bowl of a stand mixer, with the paddle attachment, whip the whipping cream until almost stiff peaks.Pro tip – The more you whip the cream the fluffier the ice cream. But, do not overwhip or you will churn the whipping cream into butter. Next, add the condensed milk and vanilla bean paste. Mix a minute more to combine. Pour into an ice cream storage container and freeze for at least 4 hours or overnight.Pro tip – For the creamiest ice cream, thaw the container for at least 10 minutes before you attempt to scoop the ice cream. This will soften any ice crystals. Enjoy!
