Chaas Masala (Jeeralu)
Chaas masala is a digestive Indian spice blend that is used to make Masala Chaas. Every family has its masala recipe. This is my Mother In Laws recipe. She makes this every year. we make it with 3 types of salt, black pepper, cumin seeds, cinnamon, and cloves. Lightly roast every ingredient and then grind it into the fine powder. It is stored at room temperature in an air-tight container. It stays good for up to a year. Once the chaas masala is ready, you can make masala chaas in 2 minutes.
What is Masala Chaas?
Indian masala chaas is the ideal summer drink! Made with curd(yogurt), water, mint, and a special spice blend, it’s not only light and refreshing but also good for your health! It is a very popular drink in India, especially in Gujarati and Rajasthani households. In some parts of Gujarat, it is also called Katchhi Beer. 🙂 In my home (in Mom’s home, in my in-law’s home, and even here), any meal is incomplete without chaas. We need chaas every day post-meal. Making the chaas does not require any special skills, all you need is a hand blender. You just have to mix water and cold curd till combined and then pour into glasses, Sprinkle some prepared jeeralu and enjoy. It’s that simple! This is the perfect way to cool off during hot days. It goes well with any Indian meal. It is one summer drink which you can make in advance.

Ingredients required to make Masala Chaas
Yogurt (curd): I prefer to use full-fat whole milk curd(yogurt). But if you’re worried about the fat intake, you can use fat-free or low-fat yogurt. You can use homemade or store-bought. If using greek yogurt, you need to add water more.Mint – Use only leaves, avoid stems.Chaas masala – Earlier prepared homemade masalaWater – You need to add water according to how thick your card is. Make sure to use cold water.
Step by step process
This recipe will make 550 grams of Chaas Masala
- In a pan, on low flame, dry roast the Cumin, black pepper, clove, and cinnamon stick until light golden brown color. Let it cools down completely.
- Take this into a  jar, crush it very well and make a fine powder. Sieve this masala well. Keep it aside.
- Now dry roast the regular salt for 5 minutes over low heat. Let it cools down.
- In a big bowl, take roasted regular salt, roasted masala powder, sendhav namak, and Kala namak. Mix them very well. For easy mixing, take all the ingredients into a blender and pulse a few times.
- Chaas Masala is ready. Add ½ teaspoon masala, or according to your liking, in Chaas / Buttermilk, a Few leaves of mint, and stir well. Masala Chaas is ready.
Pro- Tips:
Keep in mind that it tastes best when served chilled.If serving chaas right away, then always use chilled yogurt and chilled water or add a few cubes of ice. If not serving right away then store it in the refrigerator.At the time of serving, stir the chaas first and then pour them into the glass.
