Masala Nuts Ingredients
Mixed Nuts: it’s important to use raw, unsalted nuts such as almonds, pecans, cashews, walnuts, and pistachios. You can also add other nuts and seeds based on your preferences, but make sure the total quantity remains at 4 cups. Honey: Just a few tablespoons of honey will lend the nuts a delightful, light sweetness. Oil: When it comes to oil, using a small amount of cold-pressed peanut oil will enhance the flavor and help coat the nuts. You can use any oil of your choice. Spices: My preferred spice blend includes cumin powder, coriander powder, salt, chili powder, chaat masala, turmeric powder, and garam masala. Feel free to personalize the spice blend by omitting any spices you don’t fancy or adding a pinch of something extra to make it your own!

Once the nuts are deeply golden and fragrant, remove the baking tray from the oven and give the nuts one final stir, spreading them into an even layer across the pan. Allow them to cool for about 10 minutes. This cooling process is not just a waiting period, it’s a crucial step that helps the nuts to crisp up and achieve the perfect texture. After they have cooled completely, transfer the Masala Roasted Mixed Nuts to an airtight container or sealed bag. In this recipe, I use mixed nuts. They are our family’s favorites. However, you can use whatever nut or seed combination you like in any proportion. Peanuts, pumpkin seeds, or macadamias would all be beautiful additions.
