These Moth beans are commonly used in Maharashtra and Gujarat. We usually make this Math Nu Shak / Moth Beans Sabzi during our Tithi days or Paryushan Days(The days when Jaina Don’t eat green vegetables). Math Nu Shaak is dry preparation.

How to make Math Nu Shaak /Sabzi?
- Soak Moth beans overnight or at least 6 hours in water.
- Drain all the water from the soaked moth beans. Heat oil in a pan. Add soaked moth beans. Stir it once. Add salt and turmeric powder. Mix well. Add water, mix, cover it and let it cook for about 10 minutes or until moth beans are tender. Stir occasionally.
- Once moth beans are tender, add chili powder, cumin and coriander powder and mix them well. Let it cook for another 2 minutes over medium heat. Add some water if needed.
- Switch off the flame and squeeze lemon juice. Mix well.
- Math Nu Shaak is ready. Garnish it with some chopped cilantro and serve it with Phulka, Rice and Gujarati Kadhi.
