Pineapple just seems to scream summer!! I know.. I know… Summer is about to finish. But who cares!! You can enjoy this dessert around the year since it uses canned pineapple. And who doesn’t love fuss-free and no-bake desserts!!
If you love Cheesecakes, then you’ll love this dessert. This is not exactly like cheesecake but it tastes a little bit like a cheesecake but soft and fluffy. This is silky, rich, light and made with very few ingredients and 15 minutes of prep. You know which is the hard part?? Waiting for it to chill!!
Make this recipe for next get-together, Diwali party, birthday party or for Christmas party, I am sure it will be a big hit. You can make this in parfait glasses too.

Ingredients
For filling Cream cheese (room temperature) – 8 oz Canned crushed pineapple – 1 cup (Drained) Sugar – ¾ cup Heavy Whipping cream – 1 cup For crust Graham Crackers – 18 Melted butter – ½ cup For topping Chopped Canned pineapple – ½ cup Shredded coconut – ½ cup
Direction
- Take cold whipping cream in a bow. Whip until soft peaks. Keep it aside.
- In another bowl, take cream cheese and sugar. Beat until well combined and fluffy.
- Now add whipped cream and beat it again until well combined. (Don’t overbeat it).
- Add drained crushed pineapple and mix. Keep this aside.
- In a blender, take graham crackers. Crush them. Add melted butter and mix them in a blender.
- Take 9×9 inch springform pan or any baking dish. Pat the crumb mixture into pan.
- Now spread the cream cheese filling with the help of spatula. Spread evenly.
- Top it up with chopped pineapple and shredded coconut.
- keep it into refrigerator for at least 2 hours or until it sets.
- Slice and enjoy creamy, light and delicious No Bake Pineapple Delight cake.
