Peanut Butter Banana Smoothie

We all know that eating leafy greens is important. The health benefits of a diet rich in spinach, kale, arugula, lettuce, cabbage, etc. are well documented.  But, sometimes, even this girl gets tired of salad. I know, I know! (It’s rare.)

For that reason, I’m a huge fan of green smoothies and I make them more frequently than any other kind. But I think we’ve all tasted a “healthy” smoothie that was more gag than it was green. That is why this Spinach Banana Peanut Butter Smoothie is such a treat. With your eyes closed, you would never guess this is a green smoothie. It was thick, creamy, and absolutely delicious–no bitterness at all. My kids already want me to make this again. If that isn’t proof that bananas and peanut butter are exceptional for disguising the taste of spinach in a smoothie, I don’t know what is.

Bananas and Spinach make it into most of my smoothies. But, one of the things that I love about these drinks is that they are so endlessly adaptable.  You can usually add whatever fruit you have on hand to a handful of spinach leaves, splash in the milk, and you’ll end up with a tasty blended treat.  If you’re allergic to peanut butter, you can try the Simple Banana Spinach Smoothie.  I also love the light and refreshing citrus flavor of the Pineapple Orange Banana Spinach Smoothie.
