In a cocktail glass (or cocktail shaker), add some ice cubes and top it with white rum, pineapple juice, lemon juice, sugar, and coconut milk. Shake or stir to combine. Garnish with a pineapple wedge and a straw.Pro tip – You can also put it all in a blender and blend until smooth.

In a blender, add the crushed ice, rum, pineapple juice, coconut milk, lemon juice, and sugar. Blend until smooth.Pour into individual smoothie glasses. Garnish with a pineapple wedge and straw.Pro tip – Taste and adjust sweetness and consistency. You can add more pineapples or coconut milk to your taste.
Variations
Virgin pina colada – Omit the rum and this becomes a non-alcoholic mocktail. Mango Pina colada – Use mango juice instead of pineapple juice.Orange Pina colada – Use orange juice instead of pineapple juice. Berry Pina colada – For a twist, you can throw in a handful of berries along with the pineapple.Chia pina colada – Soak 1 tsp chia seeds for 10 mins. Then, blend with pineapple cubes, and coconut milk. Garnish with a maraschino cherry and pineapple juice.
