I first tried this cocktail while on the Caribbean Princess and I liked it so much I may have shared it with you on Instagram more than once. Several of you even messaged me right away while I was still on the ship asking if I would please share that recipe! Yes, it really is that good.
I am excited to be sharing these Sandia en Fuego margaritas (a.k.a. Watermelon In Fire Margaritas) with you today. If you like spicy heat, this is about to become your new favorite cocktail. Sandia en Fuego was my favorite drink on the cruise ship. (If I consider the Dirty Banana a dessert – I can get away with having two favorites, right?)
I hunted high and low for ripe watermelon so that I could share these with you as soon as I was back home from the Caribbean. So, as difficult as it was, (as in not at all difficult) I came home and made the cocktail to share with Sean and also to share with all of you. If you haven’t watched an episode of Good Spirits, you’ll want to do that. I hadn’t heard of the show before we sailed and I was so glad we were able to experience Good Spirits At Sea.
If you’re fortunate enough to sail on the Caribbean Princess or any other ship with Good Spirits at Sea, I highly recommend checking it out. The atmosphere is so much fun and the cocktail making is an experience in and of itself. There’s a whole presentation for each drink on the ship and bits of each episode are shown each time one of the specialty cocktails are ordered. The enticing Sandia en Fuego is inspired by a cruise to the Yucatan.
These drinks are created especially for the show and the research that goes into each ingredient is fascinating. I love a truly excellent flavor pairing and these pairings were spot on. The Sandia en Fuego was my favorite specialty cocktail onboard. (It was Rebecca’s favorite too and we’ve both loved this recipe for watermelon margaritas!) Lucky for all of us, it’s easy as can be to make and Princess Cruises was happy to share the recipe.
If I haven’t talked your ears off about this cruise yet, let me just say that making time to spend with your best girlfriends is priceless. My sister Jenny met up with Rebecca, Christi, and me to sail with us and we spent almost the entire trip at each other’s sides. Oh! Did I mention that these margaritas pair well with pudding? Just thought you should know, in case you’re traveling with a little old lady named Rebecca who requires pudding as frequently as humanly possible. It was an awesome added bonus to have my girls Courtney, Tanya, Hayley, Rachael, and Rebecca there with us too! Food, great drinks, and an abundance of time to relax? What more can you ask for?
I recommend swinging by the store today to grab the ingredients. That way we can both be sipping Sandia en Fuegos on our front porches tonight.
Ingredients for Sandia en Fuego (a.k.a. Best Ever Watermelon Margaritas)
4-6 slices fresh Serrano Pepper Fresh watermelon cubes – about 1 ½ cups 3 ounces Reposado Tequila 1.5 ounces fresh lime juice 1.5 ounce agave syrup Volcanic black salt
