What is a Tomato Pie?

This is a savory pie that managed to make every single person in my house smile and caused my youngest to dramatically roll his eyes back in his head as he declared it the most amazing tomatoes ever and then ask for a second slice of the pie. My sweet friend and blog reader Henny has been emailing me in reply to my newsletters for a few years now, since before we moved to Ohio. She’s given me great dog-mom advice over the years and passed along some recipes too.

The Southern Tomato Pie recipe is one of hers and it is absolutely a keeper. I have to admit that when I first heard “Tomato Pie” I wasn’t entirely sure what to expect. I’ve had a tomato tart and tomato focaccia in the past that were both absolutely delicious, but this tomato pie? It’s a whole new world of tomato awesomeness and I’m so very excited to share Henny’s Tomato Pie with you today.

Southern Tomato Pie

If you’ve been blessed with an abundance of summer tomatoes, put this recipe at the top of your list. Along with the BLT Salad that I shared earlier this week, we’ve been in tomato heaven lately. With plenty of sweet fresh tomatoes, cheese, mayo (trust me, please, it just plain works here), fresh basil, green onions, and black pepper, this is a savory summer pie like nothing else I’ve tasted. This pie rated two thumbs up all the way around the kitchen table. Serve this for a light meal with a salad or add some grilled chicken thighs if you want to bump up the heartiness.
