The day after a festive meal is always the laziest day for me. I hate doing anything. All I want to do is sit in front of the TV and relax. Of course, that all ends with – mama, I’m hungry. Thank god for leftovers!! Right? Whenever I have leftover turkey, roast chicken, roast beef, or roast lamb, they beg to be used in a sandwich. The great thing about Thanksgiving is, of course, that leftover cranberry sauce.
Bread – We love challah, but you could use any sandwich bread for this sandwich. Veggies – adding veggies to a sandwich is a great way to get kids to eat more veggies. And, let’s face it: a tall sandwich looks much better and more desirable. Make sure to cut the veggies thin so they are easier to add to the sandwich; otherwise, they will be hard to bite into. Butter – you can omit the butter, but it adds a little more to the delicious challah. Cheese – I used two slices of Emantle cheese, but cheddar or any slice of cheese would work for this. Cranberry sauce – when I have cranberry sauce on hand, I use it. If not, you can also use mayonnaise or mustard. You can even use some turkey gravy to make a moist turkey sandwich.
Step-by-step instructions
Use a bread knife and, slice the challah in between, and spread a generous amount of butter, followed by the cranberry sauce. Top it with slices of cheese and turkey, followed by the lettuce, cucumber, and tomato. Sandwich the top layer and secure it with a cocktail stick or skewer.Note – the stick or skewer helps keep everything in place, but make sure to remove it or tell the person so they don’t bite into it accidentally. Cut the challah in half for presentation or serve whole. Alternatively, you can also toast the sandwich in a Cuisinart Panini Press, Stainless Steel Griddler, Sandwich Maker & More, 5-IN-1, GR-4NP1 . I like to serve mine with a side of baked French fries.
